Stevia is a herb of sunflower family. It is the genus of about 2400 herbal species. Stevia breeds in tropical areas if south and Central America. Stevia rebaudiana is most pronounced species among all Stevia and commonly known as sweet leaf or sugar leaf or simply Stevia. Stevia is widely in world because of its sweet leaves. [1]

The most important use of Stevia is its use as sweetener or sugar substitute. Stevia's sweet taste has a slower onset with longer taste duration than of sugar.
